{"id":715,"date":"2025-01-14T15:11:18","date_gmt":"2025-01-14T06:11:18","guid":{"rendered":"https:\/\/maufood.com\/STAGE\/?p=715"},"modified":"2025-01-14T15:11:18","modified_gmt":"2025-01-14T06:11:18","slug":"il-sapore-dolce-sweet-taste-%e7%94%98%e3%81%84%e5%91%b3","status":"publish","type":"post","link":"https:\/\/maufood.com\/STAGE\/foods-blog\/il-sapore-dolce-sweet-taste-%e7%94%98%e3%81%84%e5%91%b3\/","title":{"rendered":"IL SAPORE DOLCE-Sweet Taste-\u7518\u3044\u5473"},"content":{"rendered":"\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading has-text-align-center\">IL SAPORE DOLCE<\/h2>\n\n\n\n<h3 class=\"wp-block-heading has-text-align-center\">Sweet Taste-\u7518\u3044\u5473<\/h3>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-1 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<p>Al Sud spesso il concetto di piccante \u00e8 espresso con l&#8217;aggettivo amaro che comunue, conserva sempre il significato di non dolce.<\/p>\n\n\n\n<p>Abbiamo parlato prima del piccante ed ora parliamo del dolce. forse avremmo dovuto fare il contrario, ma la cosa \u00e8 venuta da s\u00e9 ed \u00e8 rimasta cos\u00ec.<\/p>\n\n\n\n<p>Anche perch\u00e9 al Sud, lo ripetiamo, nella tradizione popolare di tutti i giorni, non esisteva il concetto di dolce come portata di un pasto di casa; o si mangiava piccante o dolce; di solito le preparazioni dolci si chiamavano &#8220;cose dolci&#8221; e comparivano in occasione delle grandi ricorrenze religiose o di festeggiamenti per la celebrazione di un matrimonio.<\/p>\n\n\n\n<p>Nella pasticceria tradizionale del Sud, a parte pochi esempi come la cassata ed altri spumoni, non esistono preparazioni complesse, o pompose come certe grandi torte glassate o farcite con creme burrose, alla Car\u00eame per intenderci, ma sono diffusissimi ancora molti dolci di origine molto antica che vengono direttamente dal Medioevo ed anche da prima; con il miele come dolcificante, e non con lo zucchero, gli struffoli o, addirittura con sciroppo di fichi, i mostaccioli. Anche il torrone tipico, quello che \u00e8 detto cupeta o copeta, si faceva con il miele; d&#8217;altra parte non bisogna dimenticare che la grande produzione di zucchero da canna arriva agli inizi del Diciannovesimo e viene dalle piantagioni dell&#8217;America subtropicale.<\/p>\n\n\n\n<p>Ma soprattutto molta pasticceria del Sud, prima di essere addolcita, viene fritta nell&#8217;olio bollente o nello strutto, esattamente come si faceva a Roma duemila anni fa e come testimonia il De re coquinaria attribuito a Marco Gavio Apicio.<\/p>\n\n\n\n<p>Questa era la tradizione e cos\u00ec sono stati preparati i dolci per secoli, fino a quando la globalizzazione non ha introdotto e inglobato molte novit\u00e0 venute dall&#8217;esterno. Oggi al Sud c&#8217;\u00e8 chi difende strenuamente la pasticceria tradizionale, ma c&#8217;\u00e8 anche chi ostenta cultura cosmica e con disinvoltura e naturalezza adopera la crema pasticcera anche nella preparazione della pastiera napoletana.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<p>In the South, the concept of spicy is often expressed with the adjective bitter, which, however, always retains the meaning of not sweet.<\/p>\n\n\n\n<p>We spoke first about spicy and now we are talking about sweet. perhaps we should have done it the other way around, but it came of itself and stayed that way.<\/p>\n\n\n\n<p>Also because in the South, we repeat, in everyday popular tradition, there was no concept of dessert as the course of a meal at home; either one ate spicy or sweet; usually sweet preparations were called &#8216;sweet things&#8217; and appeared on the occasion of major religious festivities or wedding celebrations.<\/p>\n\n\n\n<p>In the traditional confectionery of the South, apart from a few examples such as cassata and other spumoni, there are no complex or pompous preparations such as certain large iced cakes or cakes filled with buttery creams, Car\u00eame style to be precise, but there are still many sweets of very ancient origin that come straight from the Middle Ages and even earlier; with honey as a sweetener, and not sugar, struffoli or, even with fig syrup, mostaccioli. Even the typical nougat, what is known as cupeta or copeta, was made with honey; on the other hand, it should not be forgotten that the great production of cane sugar arrived at the beginning of the 19th century and came from the plantations of subtropical America.<\/p>\n\n\n\n<p>This was the tradition and this is how sweets were prepared for centuries, until globalisation introduced and incorporated many novelties from outside.
