Infatti si ottiene con la pasta da pizza, generalmente foggiata a disco e ripiegata sul ripieno che varia da luogo a luogo, secondo la tradizione e le possibilit\u00e0.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Luigi Sada, grande storico della gastronomia, attesta che i calzoni \u201channo come centro di irradiazione la Puglia e precisamente Bisceglie&#8221;.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Il calzone pugliese, di cui Sada d\u00e0 la ricetta, non \u00e8, per\u00f2, formato da un disco ripiegato sul ripieno, ma da due dischi che il ripieno racchiudono e non fa uso di grassi animali; nel calzone pugliese manca la mozzarella. Differisce, ad ogni modo, dal napoletano anche per la pasta, composta di farina, lievito, olio d&#8217;oliva, sale, acqua. Il calzone di magro \u00e8 imbottito di salsa a base di olio, cipolla, pomodori, olive, capperi, acciughe dilisca- te, prezzemolo. In quello di grasso entrano mozzarella o scamorza, prosciutto cotto, ricotta, caciocavallo.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">I calzoni si fanno di una o piu porzioni e si possono anche friggere. in taluni casi si confondono con la pitta, non nel senso che c`e` poca differenza tra una cosa e l`altra, ma propio perchje` prenndono nomi diversi a seconda della tradizione e della localita`.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<p class=\"wp-block-paragraph\">Calzone is nothing more than a stuffed pizza.
