Se ne consumano i piccoli bulbi globosi o ovatopiriformi (2-4 cm. di dia- metro) di color rosso vinoso chiaro nelle tuniche esterne, di sapore amarognolo particolare, soprattutto nell&#8217;Italia meridionale: Puglia, Lucania, Calabria. Un tempo era ingrediente della cucina dei villani, di poco valore, al punto che usato figurativa e lampasciune o pampasciune indicava un individuo sciocco, di poco valore, ma anche testicolo; quest&#8217;ultimo uso, poi, portava le signore che non volevano apparire volgari &nbsp;parlando in italiano e con un certo mal dissimulato imbarazzo &nbsp;a tradurre pampasciune in lampone, con le conseguenze che non sono difficili da immaginare. In Calabria il termine pi\u00f9 diffuso \u00e8 cipudhizzu.<\/p>\n\n\n\n<p>A seguito delle grandi migrazioni verso il Nord, il consumo si \u00e8 esteso a tutto il territorio nazionale ed \u00e8 questo il motivo per cui il nome toscano \u00e8 stato sostituito con quello pugliese. I bulbi, mondati delle tuniche pi\u00f9 esterne e privati della parte radicale ancora presente, si utilizzano di solito in insalata, previa cottura in acqua bollente, conditi con olio, sale, pepe e aceto; si consumano anche in altri modi, per\u00f2: alla genovese, fritti, dorati, etc. Luigi Sada sosteneva l&#8217;esistenza di una variet\u00e0 particolare, la migliore ovviamente dato lo sviscerato amore di Luigi per la sua terra, endemica della Puglia; Plinio afferma che ai suoi tempi ottimi bulbi provenivano da M\u00e8gara, citt\u00e0 greca non lontana da Atene; i migliori in assoluto, per\u00f2, erano ritenuti quelli prove- nienti dall&#8217;attuale Crimea, poi quelli africani e, infine, quelli pugliesi. Oggi sui mercati, purtroppo persino in Puglia, non essendoci pi\u00f9 i contadini che usano le zappe, arrivano i lampascioni nordafricani di taglia piuttosto piccola.<\/p>\n\n\n\n<p>I principi attivi del Lampascione (mucillagini e zuccheri) non sono ancora ben noti, la tradizione popolare attribuisce loro pro- priet\u00e0 diuretiche ed emollienti e gli erboristi ne consigliano solo un uso esterno in caso di pelli irritate e secche; per parte nostra ricordiamo una sua importante funzione plastica in base alla quale le nostre nonne, con il lampascione tagliato in due, usavano sfregare la pancia delle pignatte di creta quando queste, per aver cotto troppi legumi con la pancia al fuoco, si incrinavano: la tenuta stagna era garantita per ancora parecchio tempo.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<p>The term Lampascione has now entered the vocabulary of the Italian language and indicates the botanical species once recorded as<\/p>\n\n\n\n<p>recorded as (Leopoldia is tasselled onion, a spontaneous comous giliaceae or Muscari comosum) with a few erect linear leaves and tufted purple flowers that are very pretty to look at. Its small globular or ovate-pyriform bulbs (2-4 cm in diameter) are eaten, with a light wine-red colour in the outer tunics, and a particularly bitter taste, especially in southern Italy: Apulia, Lucania, Calabria. At one time it was an ingredient in the cuisine of the peasants, of little value, to the point that it was used figuratively and lampasciune or pampasciune meant a foolish individual, of little value, but also testicle; the latter usage, then, led ladies who did not want to appear vulgar when speaking in Italian and with a certain poorly disguised embarrassment to translate pampasciune into raspberry, with the consequences that are not difficult to imagine. In Calabria, the most common term is cipudhizzu.<\/p>\n\n\n\n<p>Following the great migrations to the North, consumption spread throughout the country, which is why the Tuscan name has been replaced by the Apulian one. The bulbs, trimmed of their outer tunics and deprived of the root part still present, are usually used in salads, after cooking in boiling water, seasoned with oil, salt, pepper and vinegar; they are also eaten in other ways, however: Genoese style, fried, golden, etc. Luigi Sada claimed the existence of a particular variety, the best of course, given Luigi&#8217;s undivided love for his land, endemic to Puglia; Pliny states that in his time excellent bulbs came from M\u00e8gara, a Greek city not far from Athens; the absolute best, however, were thought to be those from what is now Crimea, then those from Africa and, finally, those from Puglia. Today, on the markets, unfortunately even in Apulia, as there are no longer any farmers using hoes, North African lampascioni of rather small size arrive.<\/p>\n\n\n\n<p>Lampascione&#8217;s active ingredients (mucilage and sugars) are not yet well known, popular tradition attributes diuretic and emollient properties to it, and herbalists only recommend its external use for irritated and dry skin; for our part, we remember an important plastic function, according to which our grandmothers used to rub the bellies of clay pots with lampascione cut in two when they cracked from cooking too many legumes with their bellies over the fire: the water tightness was guaranteed for a long time yet.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-column is-layout-flow
